  • 200 g Almonds
  • 50 ml Extra Virgin Olive Oil
  • 1 Garlic Clove
  • 1 ½ tbsp Red Wine Vinegar

Step 2: Transfer the soaked bread along with the almonds, peeled garlic clove, red wine vinegar, 1 teaspoon of salt, and an additional 350ml of water into a blender. Blend on high speed until the mixture is velvety smooth and emulsified. The almonds should be finely ground, giving a luxurious texture to the soup. Step 3: Chill the soup in the refrigerator for about an hour to let the flavors meld and to serve it refreshingly cold. Just before serving, drizzle 50ml of extra virgin olive oil over each bowl and sprinkle freshly ground black pepper to taste.
