Add the chopped onion, sliced chorizo, and both red and yellow peppers, seasoning lightly with salt and pepper. Allow the mixture to gently fry for about 15 minutes, stirring occasionally, until the vegetables have softened to a tender texture and the chorizo has released its flavorful oils, infusing the pan. Add the sweet smoked paprika and finely chopped garlic cloves to the pan, stirring well.
