Ingredients

  • 200 g Rice Noodles
  • 1 tablespoon Sesame Seed Oil
  • 2 beaten Egg
  • 1 chopped Red Chilli
  • 3 cm piece Ginger
  • 450 g Prawns
  • 1 tablespoon Soy Sauce
  • Bunch Coriander
  • 0.5 handful Mint
  • Zest and juice of 1 Lime
  • Handful Peanuts

Instructions

Begin by cooking the rice noodles according to the package instructions until they are just tender but still hold a slight bite. Drain them thoroughly and set them aside to keep warm. Next, heat the fragrant sesame seed oil in a large frying pan over medium heat. Pour in the beaten eggs and gently swirl the pan to spread the egg mixture into a thin, even omelette. Cook for 1 to 2 minutes until set on the bottom, then carefully flip it over and cook the other side for another minute. Remove the omelette from the pan and slice it into thin, delicate strips – these will add lovely texture to your noodles. In the same pan, add the chopped red chilli and fresh ginger, frying them for 1 to 2 minutes until aromatic and slightly softened. Then, toss in the cooked noodles, succulent prawns, and the sliced egg strips. Splash the soy sauce over the mixture and stir-fry everything together for about 1 minute to combine the flavors and heat through perfectly. Finally, sprinkle in the chopped coriander and mint, then pour over the fresh lime juice and zest to brighten the dish with citrusy notes. Scatter the chopped peanuts on top for a satisfying crunch. Serve immediately to enjoy the vibrant flavors at their best. Tip: To maximize the fragrance, toast the peanuts lightly before chopping and adding them to the dish. Also, adjust the chilli according to your heat preference – removing the seeds can mellow the spice.
