  • 750 g Kale
  • 2 Sausages

  • Grated Nutmeg

Begin by thoroughly washing and peeling 1.5 kg of potatoes. Cut them into evenly sized chunks to guarantee they cook uniformly and soften perfectly. Place the potatoes in a large soup pot filled with salted water and add 2 aromatic bay leaves. Bring to a boil and cook for 20 minutes until the potatoes are tender. Once done, carefully discard the bay leaves to avoid any bitterness. If using fresh kale rather than pre-cut, rinse the 750 g of curly kale thoroughly under cool running water to wash away all dirt and grit. Trim off any tough stems and remove any brown or damaged leaves. Then, slice the kale into thin strips with a sharp knife for even cooking. Peel and finely chop 2 shallots to bring a mild sweetness to the dish. In a frying pan, gently melt 1 tablespoon of butter over medium heat. Add the chopped shallots and sauté them for a few minutes until they become soft and fragrant. Next, introduce the sliced kale along with 2 tablespoons of water to the pan. Season lightly and cook the mixture for about 10 minutes, stirring occasionally until the kale is tender and bright green. Warm 500 ml of milk gently on the stove or in the microwave; warm milk incorporates more smoothly into the potatoes. Immediately mash the potatoes using a potato masher or ricer for a smooth, lump-free texture. Quickly blend in the warm milk and the remaining 2 tablespoons of butter.
